"Strauben"
Serves 4
2 eggs
200g flour
0.25l milk
2 tbsp melted butter
A dash of rum to taste
1 pinch of salt
1 tbsp icing sugar for dusting
A dash of schnapps to taste
Oil for deep-frying
Ready in approx. 40 mins
Method:
1. Separate the eggs. Salt the lukewarm milk and stir in the sifted flour. Stir in the yolk and the schnapps. Leave to rest for a little, then carefully add the whipped egg whites.
2. Use a "Straubentrichter" (metal funnel with a long handle) or a similar implement to add the dough to the hot oil. One "Straube" should be approximately as large as a plate. Fry until golden yellow on both sides.
3. Dust with icing sugar and serve. Enjoy with apple purée, compote or cranberries.
